Thinking I need a Chrome Anchor

YES. i had it strripped, plated in brass and dipped in chrome at a repuable palce in SOCAL and it looks like crap 1 year later. Stainless definitly!

Can you use a polished stainless anchor, as an anchor?
I mean will it still look good or get all scratched up with normal use??

The 'plow' designation indicates a type of anchor. The Delta style (triangular wedge) and the CQR style (hinged triangular wedge) qualify as plow anchors. I didn't know a spade was a plow style anchor as well. They do work by the same principle though.
Although their ratings are quite good, they don't appear to be particularly popular. The other plows are popular though. If you can't find a stainless spade, see if you can borrow a neighbors plow style unit to see if it fits your roller before you order one. Your bow roller looks (to me) like the hinged plow would fit best.

I used mine all last season..and it still looks great. I clean it up and hit it with a coat of polish when I polish the boat.
 
this is what my bow roller looks like. The hinge plow didn't sit in it very well but the delta sits just right. It was a delta that came original on it.

I looked into plating my galvanized anchor, I visited two chroming facilities. The cost and technical problems associated with the process was more than a new anchor.

The link you posted is the anchor that I just got in the summer ($189 on ebay from marinepartdepot).
The forward hoop on your roller might be in the way. The hoop on mine sits sits square to the roller forward and yours sits vertical.
If it were me, before you order one, try one of your neighbors Delta plows first. There's probably lots of them around you. You may have to 'tweak' your roller.
Getting it right is a bit of a hassle maybe but it's worth it.
