2017 was the last year and they offered a 180 hp and a 200 hp version of the 4.3. I guess it's detuned by the pcm? Not sure

If that's a picture of your boat, with the 180 noted, you either have some type of replacement engine that I've never seen before or possibly it's a boat from outside the US. That engine was never offered in a Sea Ray made in the States.
The 4.5L offered in a Sea Ray would have been 200HP.

The standard 4.3L MPI that was offered in Sea Rays was a 220HP. It always was - even well before your model year. It was never a 180HP.
I'm primarily on this forum as a boater, but I also happen to work a SR dealership. I order boats from Sea Ray - a 180HP 4.3L was never available to order. I honestly can't explain how that got into your boat - just that it was never an available engine to order. Again, at least not in the States.

Yes I might hahahaWait, wait, wait... I think I actually DO remember a very, VERY short window where there was a tuned-down 180HP option. But it was VERY short lived as an option. It was so short... you might have the only one!

We purchased a 2016 19SPX equipped as follows in late July 2016:

I've included a couple pictures below of it in the showroom and one in the driveway. So far we've had it out about 5 times and have 13 hours on it. Wish we could have gotten out more, but the season was short being that we purchased it late summer. It's been great family fun and can't wait for next season.
Have lots of questions and upgrades I'm looking to do. Look forward to talking to you all and seeing your SPX's as well!

Hello again. I appreciate your advice and we all ready bought a tow line to use with the stern eyes. I just found the Sea Ray video showing a tube being towed from the ski pole and I thought that you'd be be interested. I still can't reconcile the confusing info, but better safe than sorry. Cheers! PhilThe ski pole is meant just for that - skiing. Tubing puts a much bigger load on the pole and it is not meant for that. There might even be a sticker on it warning about that? Use a bridle with the stern eyes -- and ideally a rope with a big "ball" in the middle so it keeps the rope from getting dragged in the wake. Another option is a Turbo Swing - those things are fantastic.

The best bet, like you said "better safe than sorry", is to go by the manufacturer's recommendations.
As I noted above, there is a sticker right on the pylon. There may/may not have been one on earlier models... it may have taken a few "instances" to figure out it's not a good idea. I've personally seen what happens to the boat on a 210SPO. Not pretty.

Thanks again for sharing your expertise--I really appreciate it! It's been 30 years since I owned a bowrider/ski boat and it's my first experience with an actual ski pole and outboard motor. It's always better to take advantage of someone's knowledge than to learn the hard way by screwing up. BTW, I found a video on the 190 SPX that was narrated by the Sea Ray Senior Brand Product Manager. While discussing the ski pole, he specifically stated not to use it for tubing. Cheers! I'm not sure if this was mentioned before - but if you find that the tow rope is "dragging" through the wake it will stop you from having as much fun with the rider during the turns. Get a "booster ball" - makes a world of difference.
I have the same boat as you and an Enertia prop on order. Do you run the ventilation holes on the hub plugged or did you drill them a certain size?47 is what I got with the OEM Black Max aluminum prop. I put on a 19 Enertia (NOT the ECO) and the speed went up to 50. Also, the prop slip dropped from 15 to 8 and my mid range (~25 mph) fuel usage went down 10%.
