Stab Fins? Do you mean hydrofoils? I'm not sure if you can get em for motors this small. I suppose you could. Don't know if they'd work or not. They'd make the motor a little more difficult to store.

could you just put a new jet in it?

I believe the venturi/throttle plate is bigger - a larger jet would just richen the mixture - you need more air too for more RPM/HP

What about the stab fins that attach to the outboard? Would they do the same thing?

Its not going to add HP to the engine - the general concensus is they don't do much - people have had much better luck installing tabs

I thought that the 6 hp was a twin cylinder.

That's why I bought a 5 Hp two stroke. A 6 Hp Merc 2 stroke was a 2cylinder and the weight went way up vs the 5Hp Merc 2 stroke single cylinder.
