If you would need to use those cockpit lights while running at night, go with red. It can take up to 15 minutes for the eye to widen the cornea to its maximum width after a flash of white or other colored light.
I really have trouble with the nav instrument companies like Furuno and RM moving away from red lighting of the dial faces to green, blue etc. MY RM helm package has green lights on the dials and even when dimmed have a very negative impact on night vision. While everything is dimmed to the max inc. radar, I still keep a beach towel over my helm instruments when running at night to preserve my night vision as much as possible.
At night, go red.
