Condensation or should I be worried

So have 1988 Sea Ray Express 390 with the stainless steel risers and dry join. Decided it would be a good time to crack open and see what's what before the season. When I was loosening the bolts, there was some water weep from the gaskets. Pulled off the riser and all inside there was a kind of sooty slickness. On the turbulator thing (cone shape wedged between the gaskets also had that same slickness and it extended into the manifold. I looked down the passage ways and they look dry. I'm thinking that it's condensation, we went from 30 to 75 in a day and it's in the water. Has anyone else seen something like that? First time I've cracks a riser open.

I would change the gaskets an run your engines... Then compression check them...
