Those kohler 5kw gen sets are known for eating spark plugs. Probably has NGK plugs in it now - replace those with Autolite 66 spark plugs and it will solve the issue -
That would work since it is a DTS control but your boat doesn't have it - you might be able to retrofit it but in my opinion it would not be worth the cost or aggravation

Make sure you didn't activate the "docking mode" on your DTS controls. That deadens throttle response around the dock and limits amount of throttle travel/sensitivity. Never tried to plane a boat with docking mode on so cant say for sure what percentage of throttle it provides at wide open but...
