Where to monitor Diesel engine temps?

I have the standard temp and oil gauges for monitoring port and starboard coolant and pressure of my Caterpiller 3208’s. The oil pressure gauges I think I trust, because the helm oil pressure gauges match the oil pressure gauges in the engine room. I don’t really trust the temperature gauges (neither at the helm nor engine room), so I’ve bought a set of surface probes that can send engine temp wirelessly to the helm (with alarms).

My question is, given how critical it is to maintain engine operating temperature, where are the best locations to place these probes on the engines?
 
Hi. I’m new to the forum and have a question. I went out the other day and noticed that my throttles didn’t give me any power. My shifters were in the forward position and moving forward but my throttles wouldn’t let me go fast. I replaced the water/fuel filter separators a few days before FYI. Anyone know what i could have done wrong or something extra i should have done

Do you have the Cat EMS on the helm with the quad gauges next to them? If so, you can use the scroll rocker push button to scroll through and the EMS will show you the temp. It is usually scrolls from oil temp, engine temp, transmission pressure, transmission temp, fuel, load, rpm.
 
No, mquiet, I think my boat is too old for the EMS to which you refer. I have the analog gauges (voltage, fuel, oil pressure, water temp, tach) for each engine at the helm. I've replaced all these analog gauges recently, so I think my sending units are bad. Rather than go through the hassle of replacing the sending units (very hard to access, and likely rusted in), I thought I would try multiple surface temperature probes.

Also, even though my house batteries register 13.4V with direct multimeter measurement, my helm analog gauges only register 11.5V. Very confusing!

Just an idea, since your boat is a bit older, I would try locating each and every ground terminal for the instrument system and remove and clean the terminals and contact area and see if your readings don't improve.
