those of us w/vee berths..........

Do you use sheets and blankets or sleeping bags ?

Sheets and blankets. An odd fit, but a queen fitted sheet will traverse the contours and hold tight.
 
Did you cut your memory foam to fit? What size did you buy?

We bought a king size topper at Costco for ~$138 as I recall. Lay the v berth mattress on it at a 45 degree angle as a template. I used an electric knife to make the cut.
 
We use something called a "Sleep System" which is a quilted queen size sleeping bag type device with a sheet held via with Velcro seam. It has s "summer" (thin) side and a "winter" (not so thin) side. I think I got it at West Marine about 12 years ago. Easy to make up, easy to store and fairly comfortable.
 
I tried a memory foam, but found that is was a pain to store.
We just use a sleeping bag for the bottom and a blanket or sheet on top. We run the A/C @ 68 anyways...so it's perfect.
 
We use a pair of queen-size sheets, sewn together across the bottom and half way up the sides. We roll them out on top of the mattress and cover at night, then fold them back up in the morning and tuck them inside a pillow sham. A cotton blanket is handy if needed, but this works well and we don't have to struggle with putting the mattress cover on and off.
