Besides maybe bug deturant is there any reason you need to loop a trap in the sink drain hose. It not like these sewer gas that you would need a trap.
 
In the case of the galley or head, It also prevents outside gasses (think carbon monoxide) from coming into your cabin.
 
It also prevents seawater from coming in - such as during rougher weather or harder turning of the boat - especially with a smaller boat. It's not the end of the world if you take it out - in your case, the sink drain and thru-hull are so close (vertically) to each other that it does slow down the draining moreso than in a taller boat... but then you're more likely to get seawater coming in, too :)
