I have a salon AC that is acting up.

If I set the thermostat to 73 or less, it will keep cooling down well into the 60's. (checking with a separate thermometer in the cabin)

If I set it to 74, it more or less stays at 74.

If I set it to 75 or higher, the temp climbs into the high 70's.

The fan runs 100% of the time like normal.

Typically this is a bad thermocouple which is a plug-in and easily replaceable. Try Cruisair SE at: 954 920 0300

I believe Alex F fixed this problem on his 420 by moving the thermocouple...

Thermistor could be bad. ( doubt it ) or the thermistor might not in the correct location. Find the a/c unit . There will be a gray or black wire with a silver long tip ( thermistor ) it should be located almost directly in front of the filter on the unit. IT should be mounted and not dangling . If its there . Use a temp gun to see what the temp is at this point and compare it to what the display on ur thermostat says .
