My boat has a 50 amp, 250 volt connector.

Some marinas offer 2x 50 amp / 125 volt connectors.

I'm not sure what adapter to use. I can't seem to find a reverse Y that does 2x 50/125 to 1x 50/250.

In my admittedly limited experience, I've heard of marinas re-wiring the pedestals to match the boat's needs for slip-holders. I would talk to your marina management to see if they will do this for you. Otherwise, I don't have any info about the adapter cable you would need.

Edit: just did some quick searches, the only adapters I found that connect to two 50 Amp outlets on the pedestal are for 100 Amp inputs. Since I'm pretty sure you've done the same searches, I doubt I'm telling you anything new.

Another Edit: Are you positive that your boat is straight 250 V, and not 125/250? Is it a European spec or something that doesn't match US power standards? Almost all of the information I'm seeing indicates that boats are usually wired 50 125/250. Can you confirm that the plug on the boat side is NOT a 50 125/250 blade configuration?
