Odd engine behavior when cold?

I'm seeing my engine act oddly when just starting up after a week in the lift. The revs jump around a little, and the oil pressure climbs (normally it is about 58 psi regardless of the speed or revs). Also, the temp gauge is climbing past 170; normally it is so solid on 168 that it appears painted there, but the last two times out it has climbed past 170 to about 180. Both of these issues resolve themselves after about 5 minutes of running at around 2500-3000 rpm, and the pressure and temp return to what I'm used to seeing.

I am fairly certain that on both days I had water in the gas (1/4 tank, sat for 5-6 days, lots of rain while sitting). Can water cause these issues? Is it more likely that my water pump impeller is losing effective pumping power? Maybe the thermostat on the engine isn't opening correctly (does this engine even have one)? I have the alpha one drive.

Any advice appreciated.
