I have a 2007 290 DA w/ twin 5.0s which is new to me for this year. Prior to the season had both water pumps/impellers replaced. On my first extended cruise the running temps were normal (~170) on each engine per the SmartCraft gauge. Now, the starboard engine says it never gets above ~110 while the port engine is always in the normal range. The starboard engine trim indicator also jumps all over.

Does this sound like a wiring issue? T-stat?

I ordered one. I assume I should just let the engines warm up and see what temp the starboard shows?
 
Have you opened up your dash and with using a small jumper wire cross the wire to the other gauge reading that's reading 170 just to see if it will also read the lower 110?

No, but that’s an idea
 
for a very quick comparision just touch the manifolds / valvecover etc of the 110 and 170 engine . if it is really that difference you will feel it easily with your bare hands .

i guess they are equal and your temp sensor went south.
