In post 15, a pic of his old risers was posted. It appears a relatively large amount of the one is missing. With poor performance and raw water circulation problems at the top end, I would want to rule out a restriction in the exhaust. Before pulling your engine, with the outdrive removed, have a good look for debris. You should be able to look into the bottom of the Y pipe from the gimble assembly. The lower of the outdrive will need to be removed if anything has travelled beyond that. It is unlikely those pieces simply vanished unless there was some you never included in the pic.
The flappers also have metal plates in them. If your old ones don't, then you will want to look for them too.
