Tough question that only you can answer because, it's all about money.

Everything in marine electronics has gotten so much better in the last 10+ years.
Color screens, daylight easy viewing, amazing chart details with fast redraw and scrolling, intuitive operation, plug and play install, the list go's on and on..

The most valuable instrument to change is the GPS moving map. It'll change your boating experence for the better! A new one should talk to your autopilot through a NMEA 0183 connection and work ok. The radar won't work unless you can save its screen. The rest is up to you.

If you really want an amazing helm throw everything on ebay for a song and buy all new stuff. New electronics all talk to each other and you'll not touch the user manual because, it just makes sense. You can easily see traffic on the new radars, autopilots drive better, the moving map is like a video game, new sounders are incredibly detailed and the VHF has an emergency distress button on it with a built in hailer.

I get to play with that stuff on other boats because, mine is also outdated.

As usual it's all about money.
