I am wondering what the experience / preference of others is in setting I/O trim for docking or other close quarter maneuvers and why that trim setting is preferred.

I have twin Bravo IIIs and seem to recall reading somewhere that full "down trim" provides maximum "bite" and therefore best for close quarter maneuvering. It seems to me, however, that a neutral trim (i.e., prop shaft parallel to the water surface) provides better control of thrust.

Thoughts?

On my single engine Bravo III, my boat handles better around the dock with the drive trimmed all the way down.

I really doubt you would notice a difference between full down and neutral trim at such slow speed maneuvers.

Should be all down

You might want to retract both trim tabs. Typically the port is down a bit and it can catch more water if you are backing up. I've heard about this, but can't say I've actually experienced this with the 300 DA. I think it was more noticeable in the 250 DA, but I didn't spend a whole lot of time going backwards either.
