help on how to perform rudder packing replacement on a 340 sundancer

i am getting ready to for bottom paint and led lights on my 2004 340 da. while i am at it i want to replace the rudder packing. i think its 3/4 inch flux packing. any tips on how to go about it since this is my first time.
i know that you should but the ends together using a 45 degree angle cut and if multple packings are used you should stagger them. also burnish the shafts with emerey cloth. some questions i have are how should i remove the retainer nut and seals. do I need to remove the rudder?

You do not remove the rudder. Just loosed the packing nut(upper half) and remove old packing. Then lay in 2-3 layers or flax as you mentioned. Tighten back down and you are done. You might need to adjust once in the water and have run it a bit.

I just got a quote from my marina to do this. They want to remove the rudders to repack them. Oh and it will cost me $774.... I do not think so.

My problem is I am not a small flexible guy so I need to find someone local to repack them for me...
