How often must water pump impellar be changed to maintain Mercruiser warranty?

I don't think you are going to be denied warranty coverage unless the pump or impeller is bad. Maintenance is typically every couple years or a couple hundred hours. That being said how you use your boat affects the wear. Lack of engine cooling can cause a lot of damage.
 
Your dealer can recommend a good hour/time interval for your area. If it's clear fresh water then the interval will be longer. If it's muddy (river) water with more sand and dirt in it, then it will be shorter. Changing the impeller annually sounds like an overkill to me. And if your impeller does fail and the water pressure drops, you should also get a Smartcraft alarm and your engine will automatically throttle back to a certain RPM to keep it protected. (You can verify the Smartcraft operation with your dealer as well.)
 
I was advised by the service advisor at my dealership (who's never steered me wrong) that for my freshwater use, it'd be three years (240 hours or so) on my 190 4.3.
 
I have the 4.3l engines with Alpha 1 Gen2 outdrives. I boat in saltwater and change mine out every other year.

That is also pretty much what my dealer told me as well, he said they would check it but every 2-3 years would be about right.
