How much coolant should come out?

I tackled a project this week to repair some leaky remote oil tubes and seals (the ones in back, behind the engine). So I had to remove the exhaust manifold and riser just to access it.

My question is: How much coolant should have come out when I opened the petcock on the bottom of the manifold. I was expecting gallons, and only got about a quart. It was the same on both engines.

I have twin Merc 5.7L EFI (1997) with closed cooling systems.

most of the coolant is still in the system, exchanger, lower block, water pump, intake manifold, other manifold etc.
 
This may not apply directly, but maybe it will at least help.

On a 350 (note: not closed cooled):

After draining all water out (for winterization), and then re-filling with AF through the hoses on the T-stat, it will take about 1/2 gallon to fill-up each manifold (including the hose). About 2-1/2 gallons for the block.
 
OK - that makes sense that the majority of coolant is lower, still in the block. It actually made the job easier, not having to drain the entire block.
