Hatch cover questions.

I have a 1977 srv 240 cuddy, and all the hatch covers are in pretty tough shape. This is a fishing model with no carpet and new hatches would be a real nice improvement. The question I have is if anybody can tell me how to go about making new ones (as far as what to buy). They are almost 3/4" thick and it looks to be a plywood with some sorta thin veneer of white (about 1/8" thick per) vinyl on both sides. Any help would be awesome! Thanks
 
are these hatches into the cabin or lockers, or "covering the engine" floor panels?
 
All the top side hatches, anchor locker, cuddy bow access, and there are three that go across the transom. I would have included pictures but boat is still in storage. I'm going to see abut getting it out early as I want to fix some of these issues in the yard before it goes in the water for the summer. I see a lot of people seem to use starboard, and this may be what I do but wouldn't mind making them as close to factor as I can.
 
I would do the starboard , never worry about rot or delamination agian , easy to clean , and looks nice , easy to cut and shape as well
 
They have a groove cut into the underside to accept a gasket, other than that and the latch they are flat and square. I believe the hinge edge is beveled maybe?
