So my wife do to two brain surgeries has balance problems. Is there a removeable grab rail that could help her getting on and off the boat. Would be putting it on a 2001 340 Da.

There are, look at WM or Defender maybe. If you just get the flush mounts you could get creative and bend up your own railings to meet your needs.
 
I did something similar for my parents to make getting into and out of a skiff easier at the dock. Since you have a "stand-a-lone" platform, it's pretty much the same as a dock. I sunk two rod holders (vertical) into the dock as "sockets" about 18" apart with a backer plate underneath. I then did some measuring and had a local welding shop create the "handle". We used SS tubing with an OD that was just smaller than the ID of the rod holders. My setup has (3) pieces, all welded together to be one piece that simply slips into and out of the rod holders. In my case, I had (2) vertical pieces (legs) and one horizontal piece (handrail). The handrail is about 48" long. It's connected across the top of the (2) legs and then extends about 30" past the vertical pieces.

You would obviously choose the height of the legs and length of the handrail that would suit your situation.

Caveat: Be exact with your measuring of the distance between the two vertical pieces so the "legs" slide in and out easily. You want an accurate "center to center" measurement for the shop. The way I did it was to be very accurate of the holes I drilled in the dock - making the center points for the hole saw exactly 18" C-C and I used a slightly bigger hole saw to give myself a little "wiggle room" when installing the rod holders.

There's also this type from Taco Marine that fits into a standard 30 degree fishing rod holder.

Here's another type from Taco Marine that's straight. It comes with a receptacle that seems more or less flush-mount.

There's also a "staple rail" option. Seems similar to what Dennis mentioned in his custom project. Here's some examples from a website I found. My dam ladder is so short it barely reaches below the top of the outdrive. It’s completely useless. And can’t be replaced because the internal bolts are buried in a molded in platform.

You could easily drill out the mounting bolts, and thru bolt a new ladder with backing plates on the underside of your platform.

That could be good for Pirate Lady's issue.

Maybe not so much for the OP since his Admiral needs stability to/from the boat/dock.
