Exhaust Temp too hot!

Good morning All,
I have been chasing an issue on my 2013 Sea Ray 260 Sundancer. I have a 5.7 350 mag. It all started with going into Guardian mode every time I try to get the boat on plane throwing 2 codes. STBD System error 59 and system error 61. These were coming on going.... I would get a day here and there with no system error but now it’s every time on plane. And now I am showing no water pressure. I replaced water pressure sensor and had a mechanic hooked it up to the computer. Still reading 0 on water pressure and was informed that those two codes are exhaust temp codes. I went ahead and pulled the raw water pump although changed last year and that still looked good. I started the engine and pulled my hoses off the manifold and I am getting plenty of water flow but what I did notice is a lot of rust and flakes did come out of the starboard manifold compared to the port. These manifolds have catalytic converters am wondering if they’re clogged? And how does the computer receive the exhausted temp code? This still doesn’t resolve why o have 0 water pressure. Any insight would be greatly appreciated. Also I cannot find any risers or manifolds that look anything like the ones I have.... thank you all for taking the time to read this.
