Engine noise when trim is adjusted, burning smell while underway

I experienced an unusual noise coming from the rear of the engine bay after I got on plane and started to trim the engine up a little bit. I continued for about 10 seconds before I brought it back to neutral and opened the bilge to check it out. The best way I know to describe the noise, is the sound of a propeller driven plan flying over head...Could also describe it as a growling.
As soon as I opened the hatch to the bilge, a little smoke bellowed out and there was definatlly a burning smell. I figured out that trimming the engine down reduced the noise to almost nothing. I also figured out that maxing out the steering either to the right or the left also produced the same noise.
I had the outdrive service last year (full service, but I can't remember if that included new u-joints in addition to the gimbal Bering). I don't know much about the function of the u-joints, so I don't even know if this is the issue...Just saw some other discussions that lead me to the u-joints). What would the burning have been though?
BTW, this is a 2006, 260 with the bravo 3 and merc 350 MAG.
Any thoughts would be greatly appreciated.
