Father in law has a 268 sea ray sundancer, he chewed up the prop so im gonna replace it. It seems pretty straight forward ...any things I may need to be aware of?

Not really...
Kill the battery switch.
A block of wood between the prop and cavitation plate makes it easy to remove / install.
Clean the splines.
Hopefully the prop shaft isn't bent / check for any sign of leakage.
Make sure there's a bit of grease on the shaft.
Make sure you don't lose the thrust washer.
50-55 ft. lbs is tight enough.
Make sure you use the locking tabs.
Turn the prop by hand a few times to make sure it's not rubbing.

Ask him what his w.o.t. rpms were and post that back here with the engine details. Now'd be a good time to make a pitch adjustment if needed.

Cheers!

I need to replace my prop this winter and have been looking at the piranha props.

http://www.piranha.com/propellers.php

They are a made of Verton and have tensile strength of 42,00 lbs.

What I think is great is that you can replace the blades individually and the blades will shear before significant damage is done to the stern drive
