Looks like it would work fine. A little ghetto perhaps but it is a housing of sorts and you provide the window ac unit. I have seen people make them out of exterior plywood and paint them. The key to it is keeping the rain/condensate out of the boat.
 
A dock mate of mine used one some time ago on a 24 footer. It was like a meat locker in there with a 5K unit.

He had to drag it off the deck every time he wanted to go out, which was a bummer, but it was cool in the boat.
 
One of the AC companies used to make a similar portable AC unit for the hatch. Don't think they are available any longer. My opinion is it is well worth the investment to add a "real" marine AC unit. I did to my old boat and just plugged into an outlet when needed. Worked great and no need to disassemble anything prior to going out.
 
I had one of the old style portable units for our 1985 250DA. I used it once or twice cause I about blew out my back trying to remove it from the boat every time we wanted to go out. I did see a picture of a boat once where the guy used tie downs and secured it and left it on there but not sure I'd feel ok doing that.
 
Built in AC is the way to go. I have done it on a few boats. The process and hookups are straight forward. The planning in terms of where to run the water lines, wiring, ducting, mount the unit, etc. is where the challenge may be. I have found this to be very simple and also amazingly challenging depending on the boat.

But once done, the livability difference on a hot day is tremendous.

Thx men! I installed today and as soulshine said it’s a meatlocker. I’m looking at 105 degrees this weekend and the first time my wife is sleeping on boat. Need to roll out red carpet. will send pictures. Thanks for all comments!
 
We had a Dometic one on our first boat. It would freeze you out, even on the hottest days. It was a pain in the butt to try to carry around to remove and install. One day months later my wife says quietly " why don't you just drop it down thru the hatch, instead of carrying it around" Well of course I say " Oh it won't fit thru the hatch" She says try it, guess what, it fits thru the hatch. ;);)
