Changing Coolant 7.4L Horizons - Difficult?

I don't think the coolant on my 1999 40' DA has ever been changed. I read some threads about this, but still not sure. I hear the only risk is not getting all the air out which will lead to an overheat. Anybody every do this, or is this something I want to let the pros do (very hard getting mechanics these days)?

I pull the water pump hose off let it drain. Fill with water and run engine then drain again I repeat a couple of times until water is clean. I think I need 18 Quarts. I put in 4 gallons of 100% antifreeze and top off with water. I have many 5 gallon pails to take to the antifreeze drop off point.
