I am new owner of a 2001 510 with caterpillar 3196. Is it normal for the these engines to hesitate 2 seconds to engage after putting into gear

Yes.........there is a lag when changing gears. The key is to think well ahead of the boat and anticipate it rather than react to whatever happens. Makes learning a new boat a challenge, but you will get the hang of it soon.
