I have a 2006 Searay 340 whereby the port aft battery when trying to install sparks tremendously. I’ve run down all the ground wires clean them and replaced the starboard alternator. I noticed that this particular switch was tripped and I’m wondering what it’s for.

What you are calling a switch is actually a breaker and when over current happens it trips. Just reset it and you should be good. You may need to find the source of the over current if it persists. In the future turn off the appropriate battery switch when changing out the battery(s).
 
It's sparking because you still have a load on it. Meaning, you have 12V accessories turned on. That's bad juju - not only could you damage electronics (hopefully all that happened is you popped the breaker) - but sparks in a gas bilge is no bueno.

As Orlando said, turning off the battery swtich is a quick way to eliminate most every 12V accessory (minus auto bilge pumps and ECM power, maybe stereo memory).

How does replacing the stbd alternator play into this scenario? Meaning, why did you mention that?
