I currently have canvas snap on bow and cockpit covers that I use on a regular basis. However, the sides and other uncovered areas accumulate a lot of dust (kept in a tarped enclosure).

I was thinking about covering with a cheap polyester cover on top the custom canvas covers to keep the dust off. The polyester cover claims to be breathable, but would double covers holding too much moisture?

I always use duel covers. The boat is always under shelter when not in use. I have done it on my Sun Deck for two years and my other boat for 18 years. The duel cover keeps the dust off when the boat is not being used.

I always tow with the snap on bow and cockpit covers.
When I get home I put the full (tied down over the rub rail) cover on also. It is weatherproof where the snap on covers allow some rain to get in. No moisture problems after years of doing this.

I agree, I hate having to wash boat "before" taking it out when I washed it prior to putting it away.

Where do you planon buying the cheap cover? I'm looking for one for when my boat is in rack storage.

Check with your local Sea Ray dealer. The cover they deliver them in ( white cloth-lined, pvc or rubberized),they destroy or give away. I got 2 for free and they're custom shrink wrapped to fit your boat. Yours, being a few years old, might want to get a 185 sport cover. They're really nice with wratchet straps and many tie down straps. I know that the ones they don't give away they shred. I've seen the big shredder when I picked mine up. Of course I bought my boat there. (Lake Union Sea Ray)

For winter storage I use the cockpit cover plus (2) full covers on top of that. I use damp rid in the boat and have not any mold/moisture issues. My sharkskin cover has lasted 5 years, you'll get what you pay for.

I would think you would be okay as long as the boat was dry when you put on both covers. But with our sundeck, that carpet is almost always wet when we put it away. I leave the back door open and unbuttoned and the cover over the anchor hatch unbuttone and pealed back to let some air flow.

I wouldn't put both covers on if it was wet underneath.
