I want to buff or polish out the small scratches on the Surface. Any Ideas?
What are they made of?

I have used a heavy compound on my counters where the PO had cut items right on the counter with no cutting board. It's hard to keep the splatter down but worked pretty well with my rotary polisher. Care does need to be taken when attempting this.
 
Mine are corian. Very closely resemble fiberglass. We have tried cleaner made especially for them and it did not do much. Mine in the galley are perfect, but the cockpit sink looks dull and faded. I need to find something to bring it back with as well.

I just searched "how to polish corian" and got lots of suggestions with pics and videos. Most involved sanding and buffing.

If they are Corian you need to wet sand (water) to get the scratches out then use a rubbing and polishing compound on them. You can wet sand (block) by hand but you should use a machine with the compounds. They will come out looking like new. Corian is a form of plastic, it is not as hard as fiberglass. I've made cockpit tables, stove and sink covers for my boat and other boats out of this material and it is fairly easy to work with.
 
I think the counter tops in my cabin on my 2004 are fiberglass? I might be wrong?
