Beverage cooler under helm seat

Ok so I think I found another project , I have never used the slide out seats facing aft under the helm seat , kind of small and uncomfortable anyway , I already removed them for winter ,for wood replacement , , but now , since the bar is above these seats , my fridge is always packed with beer,water and food , cockpits so small , awkward having a good size cooler on board .

I might use existing slide rails for the seats and fabricte two coolers with lids that will slide in and out , possibly fab them using light weight wood then fiberglassing them and integrateing drain lines that would empty in to bilge ,

any one ever seen this done ?

I did look into drawer style refrigeraters , but , whooooooa , abit pricey for me , I think drawers , possibly foam insulation wrapped with fiberglass may be it
