09 350 temp question

I have the 496's on my 2009 350 and when I am riding at high rpm 3500-4000 and pull back and shut the engine( I.e. tubing) my temps go up sometimes to 180 that sets the alarm. But I run at a consistent 160-163 temps via smart craft on both engines. So what I have been doing is let it run for about 3 mins in neutral so temps stay cool then shut off. It rises but not to 180. Is this normal? Over sensitive temp sensor? Thank you all in advance.
 
You always want to let it cool down after a run. Hot motor with no water flowing is only going to get hotter in the short time before it cools. Let it cool before shutdown
 
Hello
You need to let the engine keep running after you come off plane. This is to keep cool water going through your engine what happens when you shut right down you get thermolag. The water stoPs mOving and over heats engine.
 
FYI I ran about 170 at all speeds.
