I have the same boat and it loves to be run at 3000-3200 which gives me 26-30mph. At 2000-2500 you are probably running very inefficiently and producing a hefty wake. I open my boat up every year and get 42-4400 rpm and 41-45mph.
I built one for a 1981 245 out of finished ply wood. I just coated it with Sikkens and it held up surprisingly well for not sticking a whole lot of time or money into it.

I have been using the14.5X19 Black Diamonds as well with pretty good results other than hole shot when loaded heavy. It is manageable with tabs but I was hoping that a four blade would help to not have to use tabs every time.

How do you pull the dink up so high? I have a low swim platform on my 300 and have built a set of davits to raise the raft up high enough to ride safely. Everything works well with my setup but it is hard to pull the raft up and mine isn't as high as yours.
I took my back seat out so that I could fish the boat. The euro lounge seat that was in the back of mine was always in the way too. Deck chairs are the way to go, tell her that all the expensive boats use deck chairs.
