Winterization procedure questions

My last Sea Ray was a 7.4 carbureted engine that I used to flush with fresh water & fog into the carb. After shutting down, I changed the oil/filter & drained the block. I used to pull the thermostat, fill with antifreeze and remove critical hoses to make sure AF got to the right places.
I am winterizing a 2003 300 Sundancer with twin 5.0 engines for the first time. I followed the manual, flushed with fresh water & did the oil change. Next, I put together a 3 gallon fuel tank, ran the 2.5 gal fuel, 1 quart of TC-3 two cycle oil & 3 oz stabilizer for 5 minutes at 1300 RPM's. Next, I changed both the inline & the water separating fuel filter (no Cool Fuel), drained the block using the 3 point drain system which actually has 4 drain plugs counting the one on the thermostat housing. Does this also drain the oil & Power steering coolers?
The manual lists filling the block with AF but does not indicate where. I could pull the thermostat and fill from there or pull the large hose from the thermostat housing. What would be best? Do I need to bump the engine to get the AF into the impeller & the oil/power steering coolers?
I have to laugh because the manual states pull the drain plugs & leave out while performing other maintenance. Then states to fill with AF then remember to put the drain plugs back in before launching in the spring. Its obvious to install the drain plugs before installing the AF.
Everyone I ask just runs the pink through the outdrives & into the engines W/O draining which is dangerous & they fog the engine through the throttle body which is bad for the sensors and does not coat the fuel injectors.

On my old boat, I pulled the coolant hose going into thermostat housing and filled the engine from there.
 
When you pour coolant down the t-stat, does the engine need to be hot or can this be done cold?
