What are your best on board meals?

Stop by Somers Point NJ for AQ2010 I should be there and have something cooking.
 
It's a little messy but takes hardly any ingredients;
Any white fish or fish that can be fried (preferable fresh caught:grin:)
Need:
-Ritz Crackers- Good on the boat anytime
-1 Egg or Egg beaters in screw top container
-Veggie Oil
-Ziplock bags
-Pepper
-Lemon

---Smash ritz in ziplock add a little pepper
---Cut fillets into small- fish stick or a little bigger
---Beat egg and dip fillets in Egg or egg beaters- let excess drip off
---Put fillets in ritz ziplock and shake
---Heat oil in galley- don't need a ton of oil- a pot will make a small volume deeper but don't need to cover the whole fish
--- Fry till brown
---Spritz with lemon
-Can also substitute Ruffles chips for ritz or put a pan/pot on the BBQ to heat oil if it's a little expendable or you don't mind cleaning or blackening the pan.
 
We had Chef Ramsey on cooking with America or something like that. Maybe we can invite him to do a show on cooking on boats?
