Tuff to beat a grilled steak. Some of our favorites, with the treasures of the seas that are close contenders for us.
Halibut bites wrapped in bacon. Salmon and halibut fillets breaded with crushed salt and vinegar or bbq potato chips. Crab/cream cheese stuffed mushrooms and of course chowders with fresh prawn, halibut or crab.
 
Blue Crabs, Oysters, Asparagus, and fresh Snapper on the grill. Cold Yeungling or Bud Light to go with. We will be spending New years week at The Office as last year. Can't wait to pull the magma out of the "basement" next week.
 
Dinty Moore stew slow simmered on alcohol stove, gourmet boat food. 2nd choice, beanies & weenies. Raised 2 kids on it anchored out.

Growing up that was 60% of the menu on the family sailboat. Canned chili was also another stand by.
 
Since we're new to the whole "can cook on your own boat" scene, I'm taking these recipes to heart. Well, maybe not the Dinty Moore stew and bologna sandwiches... I raised my three kids on Kraft Mac n Cheese (with the spiral noodles because the sauce tastes better than the elbow noodles), tuna casserole, lasagna, spaghetti, and pigs in blankets. My adult kids still want me to make pig in blankets for them to this day. Comfort food, I guess...
 
Just made this this AM, Omelet in a mug; 12oz mug, 3 eggs (I only used 2) 2 TBL milk S&P mix well, top with meat of your choice, ours were chopped up shrimp from last night. Veggies of choice, top with cheese. Mix, Nuke for 90 seconds, mix, nuke 90 more seconds let it sit a pretty good couple of minutes, it’s friggin hot. Very good and super easy with minimal cleanup.

I know it takes the GenSet if your on the hook. I’m trying to revamp some of my home favorites for the boat that can be made on the Magma. Stuffed bacon wrapped jalapeños come to mind. We are “practicing” being on the hook at the dock. Basically turning off the 120v side as much as practical then “pretend” to run the generator so as not to bother our dock mates but still find out the limits of the house battery. PO put in a battery auto isolator so the starting batteries never see the house side. Better to find the weaknesses at the dock.

Cut the Jalapeños in half and take out all the seeds.. If you miss a few wooohaaaaa but if you like heat its fine...

Fry up 1 Jimmy dean sausage
Then mix 1 package of Cream Cheese, 1 Packet of Parm Cheese in a bowl... Mix all together and stuff in peppers..

Then cook in oven for 350 till they look ready lol... This is my Wife's recipe... And everyone loves it...

Instant pot is great on the boat. One thing to clean, quick and versatile.

While at home I smoke ribs, but....baby backs in the instant pot is a fantastic change up and can make enough for several folks.

  • Season the ribs with a dry spice rub.
  • Add some liquid to the bottom of pot.
  • Curl the ribs around the instant pot, with the meat side facing out.
  • Cook them on high pressure. About 25 minutes
 
Recipe for an amazing side dish - simple and fast:

Potatoes with horseradish:

Cut up 2lbs of skin-on red potatoes into 1/2" or so cubes.
Boil them in a pot of salted water till just soft (don't over cook them).
Drain them, and add some salt and pepper, 2 tablespoons of butter, 2 tablespoons of prepared horseradish, and about 1/4 cup chopped chives.
Stir it all together but not too much. Don't break up the potatoes too much. Cover to keep warm while you do your other stuff.

Fricken awesome as a side to roast beef or steak.
 
Bacon wrapped dates stuffed with chorizo and lightly drizzle maple syrup over them. Turned out perfect on my magnum grill

Similar thing with a snack twist is to put an unsalted almond instead of the chorizo.
 
Okay, best meatball recipe ever.....Cape Cod Meatballs.
4 jars chili sauce , 4 cans Ocean spray jellied cranberry sauce, one heaping teaspoon of minced garlic ( the kind in the jar at the deli, not dry)
120 of the half ounce frozen meatballs (Italian style)
Put meat balls in the oven at 350 to just thaw and brown them a bit, lightly sprinkle with pepper and garlic powder.
Put all the other ingredients in a crock pot or insta pot, heat until the cran sauce is liquified and bubbling, then add the meatballs in, let simmer for at least 2 hours and enjoy.

Swap the cranberry sauce for a jar of grape jelly and that's the "Swedish meatballs" from IKEAs restaurant.

A good friend makes omelettes in a zip lock bag. No mess to clean up. Just boil the individual bags. Everyone can choose what ingredients they want.

You can make them the night before too.
 
So thought I would kick this thread in the butt, you can read about my exploits of the Magma posts else where, I have however been experimenting with it here at the house and having fun, tonight lemon herbed chicken breast’s and stuffed jalapeños I’ll post an edit with pics after I’m done. Let’s see those recipes! :)
