Any advice or tip on what to keep an eye out for when looking @ a used 00-04 Sundancer 540.

Try your best to find one with the optional 800 hp Cat 3406's as opposed to the more common 3196 Cats. The boat is a rocket with 3406's plus, those engines are considered to be bullet-proof. The 3196 has been plagued with aftercooler problems and you don't want to be on the spending end when an aftercooler fills the engine with salt water.

Thanks does one burn more fuel over the other. I have not seen the 3406's as an option yet.

The layout of the 540DA is awesome. It seems more user friendly than the 550DA layout actually as the galley is to port rather than clear across the salon.
The 3196's are something to be wary of based on their reputation for problems with the aftercoolers.

The 3406's were an option and at the same RPM's they will burn a little more fuel. However, you will run at lower rpm's to get the same speeds, so the actual fuel burn is going to be a push. Personally, I'd spend a little more on fuel to avoid the 3196 aftercooler risk and get the 3406 dependability.
