Anyone have any good Irish recipes to share for the festivities tomorrow?

Gave up beef for lent so I'm thinking something along the lines of brat's, kraut, potatoes, but looking for something more creative than the bland!

Yes, beer is a given!:smt038

There's a recipe i found online that uses Canadian Bacon. The side is Mash. Really easy to make. Tasted pretty good too.

One Guinness backed with one Bushmills neat. Drink and repeat.

I think it was from allrecipes.com. It could have come from googling "irish recipes" then went to one of the sites that was provided. I did print off the recipes, but they're at home. I'll try to post later this evening.

Without the corned beef it ain't the same. However if you're cookin brats make sure to use some Irish Stout with the simmer. Just a bit, and drink the rest!

Irish Champ - allrecipes.com
Bacon Chops w/ apples and cider - irishabroad.com

Use Canadian bacon for the bacon chops.
