Idle Issue

I'm having problems getting it to idle. When I pull back it sounds like the engine loads up and quits. New plugs and fuel filter put in today and still same thing. I'm thinking that the choke may be sticking. Any tricks to these old carbs or anyone have experience with this issue?

Fix the thermostat problem first. Then look to the other issues.
