Help with maintenance

I dont use or recommend the RV waterline stuff for the engine.

There is a specific antifreeze for engines, and it does have corrosion protection.

That’s a really easy boat to winterize. Cheap too. Especially out of the water. Pretty much the same as my kids 2005 18’ Maxum.
Top off the tank with treated fuel.
You can get most of what you need from Walmart.
Run on the muffs.
You can either buy a spray can of fogging oil and spray it in the carb until it smokes a lot and stalls, or do what I usually do and slowly pour Marvel Mystery Oil down the carb. Either will do the job.
Change the spin on fuel filter (water separator).
You can use an OEM oil filter or an aftermarket. Your choice.
You can use the Merc 25 w 40 or Rotella 15 w 40. I used a Fram filter and Rotella on the little boat this year before my son went away to school a few weeks ago.
For under three bucks, I like to add a bottle of STP in with the clean oil, but you don’t need to.
Make sure you drain the block and exhaust.
As others have mentioned, get the right alcohol free antifreeze with corrosion protection. Not worth saving a buck or so a gallon with the stuff meant for the water systems.
I like to pull the hoses from the T stat housing and fill the motor and manifolds from there.
Put the hoses back on and tighten the clamps.
This is a good time to inspect all of your hoses and clamps.
Changing the drive oil is really easy. All you need is a cheap little pump that screws right on to the top of the new drive oil bottle. YouTube has videos to help you.
Pulling the drive to change your impeller is a DIY job too. Plenty of videos online to guide you through it.
I only use OEM impellers. They cost a little bit more but the quality is good.
Make sure you inspect your bellows and gimble bearing while the drive is off.
