That is exactly where my 1997 5.7LX engines run. Maybe a touch higher.
It is all a function of how the thermostat is working. I have 160F thermostats in my boat.
If you want to make yourself feel good, you can by a thermal IR gun for $50-$60 and see what the actual metal temperatures look like. You want to ensure both sets of risers are running the same temperature.

Merc used two different thermostats: 140 degree and 160 degree. Assuming you have the 160, you're right where you should be. No worries!
