Engine Overheating While Leaving Marina

Yuck.

Here on the Tennessee River up from Chattanooga there are years where seaweed of some type blooms and makes huge floating beds and boaters have to avoid or it will stop you in your wake fast. Tangle a prop and probably plug every hole that's trying to suck in water.

Lets hope a good cleaning will fix your issue.
 
So before starting (not sure it matters) the H20 PSI read 31.

Initially after starting at idle it started around 25 and worked it’s way down to .5 at about 10 minutes and engine temp at 150. After watching the gauge for another 10 minutes it worked it’s way down to 0....engine temp is still at 150 though.

Your pressure readings are all over the place.
It should be zero with the engine off. Once started and idling, 1-3 psi would be a normal reading.
Pressure should rise as rpm increases. I cruise around 3100 rpm and it shows about 10psi.

To Me, Your high pressure with the engine off points to a faulty water pressure sensor or wiring.
A bad water pressure sensor would not cause you to overheat, but it’s not helping you diagnose the cause.

When the impeller was replaced, were there any missing pieces on the old one? If so, they need to be found and removed.
 
Almost out of the marina and the alarm went off as we were gaining temp over 180. I stopped and got towed back to the slip to be safe.

Ran the engine around 900 RPM at the slip for about 25 minutes and the temp stayed around 155 without issues. The risers were cool to the touch.

It seemed to kick up right after I hit 1500 RPM. I noticed a decent amount of growth on the outdrive. Is it possible this could clog up the cooling system?

I would clean growth off of inlets on OD first.
Then replace thermostat .
One step at a time.....
