While soldering is not super on a boat for many cables - I spotted the below product - I think that would be great for things like NMEA 0183 wires or other thin signal wires.
It is a Solder Sleeve - where you plug the wires in from each end like a crimp wire connector - but then you use your heat gun on it - and it solders, heat shrink and water proof the connection in one step.
