So I bought a dinghy from a dock mate. Should I insure it separately or on my yacht policy?
 
I did my dinghy with my yacht policy. My center console however has it's own policy. I'm not sure what is better for you, but that's what I did. YMMV

I just researched this in detail to the point of the agent calling underwrites 3 times. Your insurance company may vary some.

The coverage in your yacht policy is for when you use it as a tender for the vessel named in the yacht policy. If for instance you primarily use it to go from your home marina to the beach and restaurants and only occasionally use it as a tender for you primary boat you may want to check out a separate policy. If it is always on your primary vessel and used as a tender for it, it is covered if the limits satisfy you.

Limits was another issue, my RIB inflatable with brand new outboard and all the accessories is worth more than the $7k coverage limit.

You may want to check with your home insurance provider as well. A different part of the world, but ours covers up to 2M on boats under 20' for about an extra $40. Our ocean boat has it's own policy which includes it's tender. The jet boat on the other hand has 1st and 3rd party liability as well as theft from residence under our home plan.
