cabin carpet replace ?

So our new to us 2000 310 Da. cabin carpet has to go. Looking at a DIY product either Plasteak or a EVA foam product.What will I find under existing carpet and will there be a lot of prep to get it ready for this type of flooring? What one of these product is best for the cabin there are dozens of manufacturers out there having a hard time figuring out which one will work the best
 
When I purchased my boat, the carpet had been removed and wood flooring was glued down to the flooring. I would like to replace it with something newer and lighter. I don’t like carpet but a concern of mine is the engine access in the salon has a gap where the carpet was originally rolled down the side and the hatch fit snug. I currently have wood trim pieces that are cut to size and are just sitting in he gap.

Has anyone replaced their carpet with a different product and what solution do you come up with covering the gap?
 
I ripped my carpet out and put in Infinity woven vinyl. I bound the edges but you could "roll" the edges over the hatches like carpet.
You may to to build new hatches or extend them.
