Advice needed for major maintenance 230 select ‘01

Newbie to this forum ( and this boat) but long time gearhead of cars , dirt bikes , wellcraft 7.4l 23’.
My, new to me, 23’ select with 490 hrs needs an oil change and a new sea water impeller and TStat. Previous owner stated those were changed in 2018 at 450 hrs.....but gauge show 180deg and creeping up to 205deg after 5-10 mins of run time at 3200 rpms . My IR temp gun shows 190 around the intake manifold, 190 on the port exhaust riser/ 160 on the starboard riser and a whopping 250deg on the remote oil filter. If I throttle back to idle, temps come back to 170 on gauge.
My question is : how do you easily get to the sea water pump for changing impeller and how do you easily change The oil. I was spoiled by my wellcraft’s doghouse covering the engine.
Any tips and tricks welcomed.
 
Depending on the configuration of your bilge, replacing the sea water pump can be difficult. Sometimes it’s easier to remove the entire pump and perform the replacement in the bench.

After replacing those items, if you still have the high temp problem, you’ll need to look at manifolds, risers, water supply passageway from the outdrive, exhaust flappers etc. as possible sources of your problem.

Do you have any info on when those items were inspected and/or replaced?
