When I leave the boat, can I leave just the ac converter on or do I need to switch on shore 1 (main) as well?

You need to switch on the shore power switch, or your (battery charger) isn't doing anything. I think that's what you're asking, correct?
 
Your AC converter is probably not a smart charger. IE it puts out constant voltage and AMPs. I have one and if left on for months it will boil the water out of the batteries as it over charges the batteries. My SeaRay manual said to leave a load on the batteries if you are going to leave the batteries unattended. Refrigerator works for me. Make sure you add water as required to the batteries. I now have a smart charger and I leave my batteries charging all winter. They still have water in them in the spring. I do not leave a load on the batteries with the smart charger.

Yes, first turn the main on then the ac converter on, correct?
 
That's the safest way of going about it ...turn on your main with no load, then turn on whatever you want to run.
