Just curious how often everyone changes all of these parts.... I re powered my boat last year and of course changed all of these, about a 110 hrs ago... Debating on doing them next year or going 1 more year... The boat runs perfect with no sign of any perfomace issues...

In reality, the fuel/water sep "shouldn't" need to be replaced every year. But you really have no way of knowing it's health status so it's best practice to do it preemptively... unless you install a fuel pressure (vacuum, actually) gauge at the filter head and monitor it.
 
Preventative Maintenance is a good thing that’s even better if you have the time and ability to do it yourself.
I realize that some don’t have the time or ability, even if they have the know how, because of Marina rules or physical limitations etc., so their schedules could be different.
Plug wires should be fine for several years as long as they are routed and secured in a way that avoids them laying or rubbing against something that will wear or burn through them. Check them visually every year to make sure none of that is happening to them.
I did the plugs and caps, etc. on my old boat’s motors every other year. They really didn’t need it, but I like puttering around with things on the boat anyway and it was good to make sure they were coming in and out easily and to get a look at them to see how the engines were burning.
They were all relatively easy to get to for maintenance and were fairly cheap.
Fuel filters and water separators got done at the end of each season with the oil changes as part of my winterizing routine along with cleaning the flame arrestors and taking a good look at all the belts, hoses and check of clamps.
If you’re in a place where you have to pay for the mechanic to do everything then you can probably push back the plugs, caps, etc. to more years with no consequences at all.
But I’d still have the filters done every year and do a physical check of the belts, hoses and clamps myself.
