when I am anchored with motor off which should I put the switch on to draw the least amount of power? I want to avoid draining the battery as much as possible
The only way you're going to draw power is if you're using 12V accessories. If you're not using anything, don't worry about it. You can leave it that way for weeks and be just fine... although obviously that's not best practice.
