Depends on the motors. If you have 5.0's then you might have to run them a little higher than a 350 for example. The key is to find the point where you are on a "crisp" plane. On our boat around 25 mph and around 3,000 3,100 rpms is on plane with twin 350's, but kicking the rpm's up to 3,100 to 3,200 gives it a little better feel and seems to work less based on the sound (Like THAT is a way to measure anything!). Our boat has the 11 foot beam and is 30 feet from transom(not swim platform) to the end of the fiberglass up front. I can cruise around 24 or 25 if we have an average load aboard. I spent two weeks in the San Juans last summer and the two mid 90's 270's that were with me complained when I slowed down because they were heavily loaded and coming off plane! I had to run about 27 mph to keep them happy especially when they were following me in rough water. That was around 3,300 rpm as I recall.
